Drying fruit is an age-old practice designed to preserve the fruit by
reducing microbial activity and minimizing physical and chemical
changes. There are two ways to dry figs. The first is to allow them to
dry in the sun, and the second is to process them using machinery.We use
the traditional method of sun-drying to preserve our figs. Sun-dried
figs retain more of their natural shape, and also have a much deeper
flavor.
Figs are not harvested until they are fully ripe and start to get dry on
the branches of the trees usually from the start of September. Harvested
figs are then dried in a natural way by exposing them in direct sunlight
for an intense drying process. These fresh figs are laid on special
drying trays under the warm sun. After delivery of the best dried figs
in our region by the manufacturer, they are fumigated at the factory
right on arrival. After calibration, figs are selected under ultra
violet lamps for sorting out Aflatoxine contaminated ones.Then washed,
processed and stored in a cold store according to their size. The figs
are packed after final quality control in packages ready for delivery.
